Private chef in Rome

A city with its own strong culinary grammar, where a menu has to earn its place rather than arrive as a novelty.

Roman cooking and Sicilian cooking are not the same thing, and I would not pretend otherwise at a Roman table. What I cook is mine — Mediterranean, built from where I grew up and where I have worked since.

If you want carbonara, I will make it the way it is made in Rome: four ingredients, no cream, and the pan off the heat before the egg goes in.
