What I cook

Three things, in the order people ask for them. All of them start the same way — a conversation about who is eating and what the evening is for.

Private dining at your table

A bespoke menu, cooked in your own kitchen, served at your own table.

Dinners at home, from four people to a long table. Birthdays, anniversaries, a night when you would rather not book a restaurant.

What it includes

  • A menu written for you, not chosen from a list
  • Shopping and preparation
  • Cooking in your kitchen on the night
  • Service at the table
  • The kitchen left as it was found

Usually four to five hours, door to door

Live cooking for events

Cooking in front of your guests, as part of the evening rather than behind a door.

Company dinners, receptions, celebrations, product launches — anywhere the cooking is meant to be watched.

What it includes

  • Menu built around the format of the event
  • A station set up in the room
  • Cooking and plating in front of guests
  • Talking to people while the food is made

Agreed per event

Restaurant consulting

Menus that a kitchen can actually execute, costed to the last gram.

Restaurants opening, restaurants reopening, and restaurants whose menu has stopped making money.

What it includes

  • À la carte menu, written for the kitchen you have
  • Full food costing, dish by dish
  • Recipes and method sheets the brigade can follow
  • Training on the line
  • Follow-up once the menu is running

Typically three months

Something else?

Cooking classes, a tasting for a small group, a menu for a place that is not a restaurant. Ask — most of what I do started as someone’s odd request.
